It was a Valentines day morning and I had to make something special and sweet for my sweet valentine. Did not have much time as it was a weekday hence decided to bake soft orange cake. Its quite easy to make and very tasty n supersoft.
Ingredients:
- Softened butter (salted/unsalted) – ¾ cup + for greasing the tin
- Granulated sugar – ¾ cup
- All-purpose flour – 1cup
- Baking powder – 1 ½ tsps
- Eggs – 2 (at room temperature)
- Vanilla extract – 1 tsp
- Orange zest – 1 tsp
- Freshly chopped orange – 1 cup
- Marmalade – 2 tbsps
- Fresh orange juice – 1/4 cup
- Buttermilk – ¼ cup
- Pinch of salt if unsalted butter is used
Method:
- Preheat oven to 180°C. Grease and line a 6” square cake tin. I used a loaf tin.
- Sift flour, baking powder, salt into a bowl and keep aside. (These are our dry ingredients)
- Into the other bowl add butter and sugar and beat with a hand whisk or electric beater unless it becomes creamy.
- Add orange zest and then again mix.
- Add in one egg at a time and continue beating. Now add chopped oranges and mix.
- Mix orange juice and buttermilk together.
- Fold in the dry ingredients and juice and buttermilk mixture in three batches.
- Pour into prepared tin and bake for 40 minutes or until a skewer inserted into the center of the cake comes out clean.
- Allow cake to cool for 5 minutes in the tin and then turn out onto a cooling rack to cool.
- Dust it with powdered sugar and serve.
Thanks n Happy Baking :)
