Eggless Spiced Apple & nuts cake


I was craving badly for some sweet Yesterday. Went out but could not find any eggless stuff (because of Navratra) and returned home with a sad smiley. Had no plans to prepare anything as it was a very tiring day for me. But my severe craving made me to prepare something during midnight. Therefore decided to bake an eggless cake. Prepared Spiced apple & nuts 'chotu sa' cake. It was so light and flavorful that we finished it completely while it was warm. My kitchen had a strong n lovely fragrance of cinnamon, simply loved it. I am sure if you are going to try it you too will have a wonderful smile on your faces like I had.The recipe is very easy n quick to prepare. So lets quickly see the ingredients moving down with the method to prepare.

Ingredients :
I have divided the ingredients list in two parts- the dry & wet ingredients. 
Dry ingredients:
  • All purpose flour/Maida : 1 cup
  • Brown Sugar : 1/2 cup (quantity may vary as per the apple's sweetness)
  • Apple : 1 large size
  • Baking powder : 1 tsp
  • Baking soda : 1/4 tsp
  • Cinnamon powder : 1/4 tsp
  • Nutmeg powder : 1/4 tsp
  • Mixed nuts (I used walnuts, cashew, almonds & raisins ) : 1/2 cup
  • Salt : a pinch
Wet ingredients :
  • Curd/Yogurt (at room temperature) : 1/2 cup
  • Oil : 1/4 cup
  • Vanilla extract : 1/2 tsp
Method :
  • First preheat the oven at 180°C.
  • Prepare the apple sauce : Peel the apple and finely grate it. In a pan add grated apple and sugar. Let it cook for some time unless it forms a thick & shiny sauce consistency. When 90 % done, add cinnamon and nutmeg powder. Let the sauce cool down to room temperature.You can also prepare the sauce a day before.
  • Sieve rest of the dry ingredients together (atleast 3 times)
  • Mix the nuts with flour, so that they have a nice flour coating over them.
  • In other bowl mix the wet ingredients very well.
  • Add in the dry ingredients via folding method into the wet ingredients. Don't over mix.
  • Pour into a greased cake tin. Bake it on the middle rack for 40-50 mins or unless a tooth pick inserted in the cake comes out clean.
  • Give a rest of 5 minutes, demold and cool on a rack.
It taste best when its a bit warm. Serve it with vanilla ice cream or just like this only.

  1. Which oil did you use for this cake and can you recommend other oils which will be suitable to make this cake with? Thanks

    1. I used simple vegetable oil for it. You can use any oil which has low fragrance. So I recommend vegetable refined oil for it. You can also use Canola or sunflower oil. I never use olive oil for making cakes.

  4. hey baker...i just loved ur simple but delicious recipes.....i hav a lil ques....my cake sometimes gets dump in middle after baking.....why does that happen....it makes me :(

    1. Thanks Pinz :), the sinking of cake mostly happens due to temperature shock. While baking if the oven is opened several times then this might happen. Or if overmixing of batter is done.
