Orange Marmalade cake


It was a Valentines day morning and I had to make something special and sweet for my sweet valentine. Did not have much time as it was a weekday hence decided to bake soft orange cake. Its quite easy to make and very tasty n supersoft.

Ingredients:
  • Softened butter (salted/unsalted) – ¾ cup + for greasing the tin
  • Granulated sugar – ¾ cup
  • All-purpose flour – 1cup
  • Baking powder – 1 ½ tsps
  • Eggs – 2 (at room temperature)
  • Vanilla extract – 1 tsp
  • Orange zest – 1 tsp
  • Freshly chopped orange – 1 cup
  • Marmalade – 2 tbsps
  • Fresh orange juice – 1/4 cup
  • Buttermilk – ¼ cup
  • Pinch of salt if unsalted butter is used


Method:
  • Preheat oven to 180°C. Grease and line a 6” square cake tin. I used a loaf tin.
  • Sift flour, baking powder, salt into a bowl and keep aside. (These are our dry ingredients)
  • Into the other bowl add butter and sugar and beat with a hand whisk or electric beater unless it becomes creamy.
  • Add orange zest and then again mix.
  • Add in one egg at a time and continue beating. Now add chopped oranges and mix.
  • Mix orange juice and buttermilk together.
  • Fold in the dry ingredients and juice and buttermilk mixture in three batches.
  • Pour into prepared tin and bake for 40 minutes or until a skewer inserted into the center of the cake comes out clean.
  • Allow cake to cool for 5 minutes in the tin and then turn out onto a cooling rack to cool.
  • Dust it with powdered sugar and serve.
